After cooking the prawns, they are immersed in the cold (4degC) water to stop any further cooking and cool them down before being glazed, packed, and stored in frozen storage via master packaging. 200gm of frozen water is packed into each package to maintain shape in the freezer without sticking together; additionally, it protects them from dehydration, desiccation, or damage during freezing.

Storage

Cooked whole prawns can be successfully frozen using plate freezers; immersion freezing does not work effectively. Frozen prawns are more accessible to peel than their counterparts that have been thawed out; their texture also tends to improve over time.

IQF processing occurs after seafood has been graded, dressed, trimmed, washed and checked for filth. Once graded and cleaned to our standards, it is then glazed, packed, weighed and frozen in our master freezers after master packaging – and stored according to buyer requirements – including galda bagda chaga tail-on/black tail-off products as well as peeled/deveined versions etc.

If you buy a bag of frozen prawns in the freezer section at your local supermarket, they are already frozen. That is because prawns are frozen almost immediately after they are caught or harvested. It is done to preserve the fresh, shrimpy flavour until they are thawed and prepared for consumption.

If a frozen prawn looks or smells fishy, has spots or discolourations, or feels slimy to the touch, it is probably not good. Likewise, if a cooked prawn has been refrigerated for more than two days and the use-by date has passed, it may not be safe to eat.
